Ingredients
4 cups shredded green cabbage (1 medium coreless head)
1 cup grated Granny Smith apple
1 cup sliced julienne carrots
1/2 cup mayonnaise (vegan or plain, substitute with Greek yogurt if preferred)
1 tbsp apple cider vinegar (substitute with lemon juice if preferred)
Salt, to taste
Golden raisins (optional)
Honey (optional, for added sweetness)
Instructions
Dice the cabbage into uniform 1/8-inch strips and store in an airtight container.
Grate the apple using a food processor or box grater.
Julienne the carrots using a mandoline knife.
In a large bowl, combine the cabbage, grated apple, and carrots.
In a small bowl, whisk together mayonnaise, apple cider vinegar, salt, and honey (if using).
