Ingredients
15 oz can cooked chickpeas, rinsed and drained
1/2 cup high-quality smooth tahini
1/4 cup fresh squeezed lemon juice
1 clove garlic, minced fine
2 tbsp extra virgin olive oil
2–3 tbsp iced water
1/2 tsp salt
Instructions
Drain and rinse the chickpeas under cold water until no foam remains.
Combine the tahini and fresh lemon juice in a high-powered food processor.
Blend the mixture for one minute until it appears thick and whipped.
Add the minced garlic, salt, and half the olive oil to the processor.
Process for another minute, scraping down the sides of the bowl as needed.
Add the chickpeas to the processor and blend for two full minutes.
Slowly drizzle the iced water into the base while the machine is running.
Stop the machine once the consistency becomes pale and extremely smooth.
