Ingredients
2 lbs boneless skinless chicken breast (halal-certified)
1 cup barbecue sauce (smoky flavor profile)
4 cups crisp lettuce
16 mini slider buns
2 tbsp vegetable oil
Instructions
Cut chicken breasts into 1/2 inch thick strips
Combine 1 cup barbecue sauce and 1 tbsp oil in a zip-top bag, then add chicken and refrigerate
Bring chicken to room temperature for 30 minutes
Heat 1 tbsp oil in a skillet over medium-high heat
Cook chicken for 5 minutes per side until golden
Transfer to 4-inch broiler-safe baking sheet and broil 3 minutes, brushing with remaining barbecue sauce during last 2 minutes
Toast buns in skillet 20 seconds per side
Slice cooked chicken into 3/4 inch patties
Place chicken on bottom bun, top with lettuce and sauce, then cover with top bun
