Description

Ingredients

6 large ripe bananas, sliced
1820 vanilla wafers
1 cup (236ml) heavy cream
1 can (12oz/340ml) evaporated milk
3⁄4 cup (150g) granulated sugar
2 tsp vanilla extract
1⁄4 cup (30g) cream of wheat or 2 tbsp cornstarch


Instructions

In a medium saucepan, mix evaporated milk, heavy cream, cream of wheat (or cornstarch), and sugar. Cook over medium heat until thickened.
Whisk egg yolks until smooth. Gradually add 1/2 cup of the warm custard mixture to temper the yolks, then fold into the saucepan.
Continue cooking until custard coats the back of a spoon. Remove from heat, stir in vanilla extract, and cool.
In a large bowl, layer banana slices and wafers. Pour custard over the top, cover, and refrigerate for 1 hour.
Before serving, fold cooled whipped cream into the custard. Layer additional bananas, wafers, and custard. Chill for 45 minutes before serving cold.

Notes

Use overripe bananas for maximum sweetness.
Non-dairy milk or coconut milk can replace evaporated milk for a lactose-free option.
Chill custard thoroughly before adding whipped cream to prevent it from melting.
Store leftover pudding in an airtight container in the fridge for up to 2 days.
