Ingredients
15 oz can chickpeas
1/3 cup high-quality hulled tahini
3 tbsp fresh lemon juice
1 clove fresh garlic
1/2 tsp ground cumin
2 tbsp extra virgin olive oil
2–3 tbsp ice water

Instructions
Place the tahini and fresh lemon juice in a food processor and blend for one minute until pale and creamy.
Add the crushed garlic, cumin, salt, and olive oil, then process for thirty seconds to fully integrate.
Add the rinsed chickpeas in three small batches, pulsing between each addition for even texture.
While the machine is running, slowly pour in the ice water one tablespoon at a time.
Scrape down the sides of the bowl as needed and blend until the hummus reaches a completely smooth consistency.
