Ingredients

15 oz (1 can) chickpeas, drained and rinsed
1/3 cup high-quality tahini
3 tbsp freshly squeezed lemon juice
1 clove garlic, minced
24 tbsp ice water
2 tbsp extra virgin olive oil
1/2 tsp ground cumin
Salt to taste


Instructions

Combine the tahini and lemon juice in a food processor and blend for one minute to create a whipped, light paste.
Add the minced garlic, salt, and cumin to the mixture, pulsing for thirty seconds until fragrant.
Pour in one tablespoon of ice water while the processor runs to emulsify the base.
Add the rinsed chickpeas to the processor bowl and blend for two full minutes.
Scrape down the sides of the bowl with a spatula.
Continue to blend while slowly drizzling in additional ice water one tablespoon at a time until the desired fluffy texture is achieved.
Transfer to a serving bowl and finish with a drizzle of extra virgin olive oil and a sprinkle of cumin.

Notes
