Description
Grilled corn ribs glazed with a natural, sweet-spicy marinade deliver a smoky, iron-rich vegetarian steak experience. Perfect for summer meals with effortless 40-minute prep.
Ingredients
4 ears grilled corn
2 cloves garlic (minced or freshly pressed)
3 tbsp BBQ sauce (natural, alcohol-free)
1 tbsp brown sugar (or maple syrup)
2 tbsp olive oil (high-smoke point)
1 tsp paprika (smoked recommended)
Salt to taste
Instructions
Trim corn silk and silverskin, then submerge in ice water for 10 minutes
Blend garlic, BBQ sauce, brown sugar, and paprika into a smooth mixture
Whisk olive oil and salt into the glaze until emulsified
Preheat one side of the grill to 400°F (direct heat) and the opposite to 250°F (indirect)
Brush marinade evenly over corn on the cob
Bake on indirect heat for 15 minutes, then sear over direct flames for 5 minutes
Reapply half the marinade halfway through cooking
Notes
Use cedar planks for smoke flavor; rotate constantly during searing to avoid charring
Substitute maple syrup 1:1 for brown sugar if preferred
Ensure corn is fully dried before marinating to prevent steaming effects
