Ingredients
2 lbs Yukon Gold Potatoes, cut into 1-inch chunks
1/2 cup Mayonnaise
1/2 cup Greek Yogurt
1/4 cup Fresh Dill, finely chopped
1 tbsp Fresh Lemon Juice
2 tsp Dijon Mustard
1/4 cup Red Onion, finely diced
Salt and Black Pepper to taste
Instructions
Place potatoes in a large pot and cover with two inches of cold, heavily salted water.
Boil over medium-high heat until fork-tender.
Drain in a colander and allow to steam-dry for five minutes.
In a small bowl, whisk together mayonnaise, Greek yogurt, mustard, and lemon juice.
Fold in the chopped dill, red onion, and black pepper.
Place cooled potatoes in a large bowl and gently toss with the dressing until evenly coated.
Chill in the refrigerator before serving to allow flavors to meld.
Notes
Steam-drying the potatoes is crucial for ensuring the dressing clings to the surface without becoming watery. This salad tastes even better after sitting in the fridge for at least an hour. Store leftovers in an airtight container for up to 3 days.
