Ingredients
2 cups cooked shredded chicken
8–10 corn tortillas
2 cups vegetable oil
1 cup freshly grated sharp cheddar
2 tablespoons taco seasoning
2 tablespoons water
1/2 cup sour cream (for serving)
Instructions
Combine the shredded chicken, taco seasoning, and water in a bowl until evenly coated.
Heat vegetable oil in a heavy-bottomed skillet to 350°F.
Place a small amount of seasoned chicken and a pinch of cheese onto each corn tortilla.
Fold the tortilla in half and hold the edges firmly with tongs.
Carefully lower the folded tortilla into the hot oil and fry until golden brown and crispy on both sides.
Drain the tacos on paper towels to remove excess oil.
Serve hot with a dollop of sour cream.
Notes
Ensure the corn tortillas are fresh to prevent cracking while folding. Maintain the oil temperature consistently to ensure a crispy texture without burning. Using rotisserie chicken is a great time saver.
