12 oz lasagna noodles (oven-ready or zucchini slices, for low-carb)
24 oz marinara sauce (mixed with 2 oz balsamic vinegar)
15 oz ricotta cheese (substitute with cottage cheese blend and 1 tsp lemon juice)
2 cups shredded mozzarella cheese (dairy-free preferred)
1 lb lean ground beef (swap with ground turkey, lentils, or kofta blend)
2 medium onions (finely diced)
3 cloves garlic (minced)
1 tsp salt
1/2 tsp black pepper
1 tsp dried basil
1 tsp dried oregano
1 tsp Italian seasoning
1/4 cup grated Parmesan cheese (optional, omit for dairy-free)


Instructions

Brown ground beef in a skillet over medium heat until cooked. Drain excess fat.
Sauté onions and garlic in the same skillet until softened (5-7 minutes).
Add marinara, balsamic vinegar, salt, pepper, basil, oregano, and Italian seasoning. Stir to combine.
In a bowl, mix ricotta with 1 tsp lemon juice (if using cottage cheese blend).
Transfer marinara mixture to crockpot.
Layer lasagna noodles across the bottom, followed by a layer of ricotta mixture, then mozzarella. Repeat layers until ingredients are used, finishing with a top layer of marinara and mozzarella.
Cover and cook on LOW for 6-8 hours or HIGH for 3.5-4 hours until noodles are tender.

Notes

Use oven-ready noodles to avoid pre-boiling instructions.
For halal-friendly swaps: replace ground beef with halal-certified kofta or lentils.
Fresh mozzarella holds layers better than pre-shredded.
Top with basil or Parmesan before serving for extra flavor.
