Ingredients
4 cups strawberries, fully ripe, washed, and hulled
1/3 cup granulated sugar, or 1/3 cup coconut sugar/maple syrup
2 cups heavy cream, or 2 cups dairy-free substitute (cashew or coconut cream)
1 cup vanilla yogurt, or 1 cup oat/coconut yogurt for vegan option
1 tbsp lemon juice
Instructions
Chill a large bowl with 1 cup of ice and water to prepare strawberries
Combine 1/2 cup strawberries, sugar, and lemon juice in a food processor
Pulse until smooth and fully broken down
Stir in 1/2 cup remaining strawberries by hand for a textured base
Chill puree for 10 minutes
Pour heavy cream into a cold mixing bowl and whip until soft peaks form (3-5 minutes)
Fold whipped cream into the chilled strawberry puree and yogurt, mixing softly to maintain peaks
Transfer mixture to serving bowls or jars
Chill for at least 30 minutes before serving

Use ripe, juicy strawberries for maximum flavor. The neutral base ensures strawberries remain the star ingredient. For vegan version, use oat or coconut yogurt and dairy-free cream substitutes.
