Description

Tender grilled corn cobs smothered in a tangy, creamy cotija mixture. A perfect balance of smoky, spicy, and bright flavors with herbaceous cilantro and grilled onions. Street-style comfort in every bite!


Ingredients

Scale

4 ears fresh sweet corn
4 cups mayonnaise (full-fat)
1 cup grated cotija cheese
2 tbsp Mexican chili powder
2 jalapeños, minced
4 tbsp lime juice (freshly squeezed)
1 small grilled onion, diced
2 tbsp fresh cilantro, chopped


Instructions

Shuck corn cobs and rinse kernels
Preheat grill to medium-high (400°F/200°C)
Brush cobs with olive oil and sprinkle with salt
Grill 10–15 minutes rotating for even char
Mix mayo, grated cotija, chili powder in a bowl
Add minced jalapeños and lime juice
Heat reserved grill section for corn
Pour warm topping over grilled cobs
Top with grilled onions and cilantro
Return to grill 1–2 minutes to melt cheese
Drizzle with extra lime juice before serving

Notes

Grill corn first then heat topping to preserve texture
Use romesco cheese if cotija is unavailable
Adjust jalapeño quantity to tailor heat
Add toppings just before serving for better melt
