Finished with a luscious coating of melted buttery garlic and freshly grated parmesan, these skewers provide a high-protein, low-carb meal that elevates simple pantry staples into a restaurant-quality dining experience. Perfectly charred, tender, and intensely savory.
Ingredients
1.5 lbs chicken breast, cut into 1-inch cubes
1/2 cup parmesan cheese, freshly grated
3 tablespoons unsalted butter
4 cloves garlic, minced
2 tablespoons extra virgin olive oil
1 tablespoon dried Italian herbs (oregano, basil, and thyme)
Instructions
Place cubed chicken in a bowl with olive oil, half the garlic, and dried herbs; toss to coat.
Soak wooden skewers in water for 20 minutes.
Thread marinated chicken onto skewers.
Preheat grill to medium-high heat.
Cook skewers for 5-6 minutes per side until the internal temperature reaches 165°F.
In a small pan, melt butter and simmer the remaining garlic for 1 minute.
Brush skewers with the garlic butter and immediately sprinkle with parmesan cheese before serving.
Notes
Ensure chicken is cut into uniform pieces for even cooking. For an oven-baked alternative, roast at 400°F (200°C) for 15-20 minutes, turning halfway through. Store leftovers in an airtight container for up to 3 days.
