2 lbs Yukon Gold potatoes
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice
1 tbsp dried oregano
1/2 cup red onion, finely diced
1/2 cup Kalamata olives, pitted and halved
1/4 cup fresh parsley, finely chopped
Salt to taste


Instructions

Scrub the potatoes thoroughly and cut into uniform one-inch cubes.
