Description

A zesty Mexican/Tex-Mex side dish featuring smoky grilled corn coated in a vibrant chili-lime butter blend. Combines charred sweetness with citrus heat and creamy richness for a balanced summer favorite.

Ingredients

Scale

1/2 cup unsalted butter
1 tsp chili powder
Juice and zest of 1 lime
1 tbsp honey
1/4 tsp ground cumin

Instructions

Preheat grill to 400°F
Husk corn and rinse; pat dry
Melt butter in microwave for 10-15 seconds
Mix softened butter with chili powder, lime juice/zest, honey, and cumin
Brush butter evenly over corn
Wrap tightly in heavy-duty foil and grill 15-20 minutes
Unwrap, re-butter, and grill 2-3 more minutes until charred

Notes

Use fresh corn with intact husks for maximum juiciness
Wrap foil twice to prevent leaks
Adjust spice level by increasing/decreasing chili powder
For vegan option substitute butter with coconut oil
