Ingredients
15 oz can chickpeas, rinsed and drained
1/4 cup roasted tahini
3 tbsp fresh lemon juice
1 clove garlic, minced
2 tbsp extra virgin olive oil
2 tbsp ice water
1/2 tsp sea salt
Instructions
Combine the tahini and fresh lemon juice in a high-speed food processor.
Process for one full minute until the mixture appears thick and whipped.
Scrape down the sides of the bowl to ensure even incorporation.
Add the minced garlic, salt, and extra virgin olive oil to the processor.
Pulse the mixture for thirty seconds to create a fragrant, uniform paste.
Pour in half the drained chickpeas and process until partially smooth.
Add the remaining chickpeas and the ice water to the bowl.
