Description
Grill fresh corn in the husk to enhance natural sweetness and add a smoky flavor. The husks create a self-basting effect, keeping the kernels tender without constant attention. A simple, easy method for juicy, flavorful corn.
Ingredients
4 ears fresh corn on the cob
2 tbsp melted unsalted butter
1 tsp coarse sea salt
1/2 tsp garlic powder
1/2 tsp paprika
1 tbsp olive oil (optional)
4 large leaves kitchen foil (optional)
1 lime (optional, for serving)
Instructions
Remove silks by peeling back the husks partially and scraping them away with fingers
Trim the husks if necessary for even stacking
Brush the inside husks with melted butter, sea salt, garlic powder, and paprika to coat kernels
Preheat charcoal or gas grill to 350°F for indirect heat
If using foil, wrap each ear snugly to create a steaming barrier
Place the prepared ears on the grill, ensuring the husks are fully enclosed but not tightly sealed
Close the grill lid and let cook for 10 minutes
Rotate ears carefully and continue grilling for another 10-15 minutes, or until kernels are tender and husks are lightly charred
Remove from grill and let rest for 5 minutes before peeling back husks to serve
Notes
Use fresh, mature ears of corn not frozen.
Use olive oil or coconut oil instead of butter for a vegetarian alternative without animal products.
Adjust salt to taste. Alternatively, use garlic salt for a more intense flavor.
Skip garlic powder or substitute with ground cumin for plain corn.
Smoked paprika adds depth, while sweet paprika offers milder taste.
Foil is optional; use if husks are too small or to protect from charring.
Serve with lime wedges for a refreshing tang.
