Ingredients
4–6 ears fresh corn on the cob
1 tbsp coarse sea salt or kosher salt
1 tsp ground black pepper
1/4 cup extra virgin olive oil (or avocado oil)
1 tbsp cilantro or chili flakes (optional)
Instructions
Trim the stalk ends of each corn ear using a sharp knife
Remove outer husks, leaving 1-2 tender layers intact
Brush husks thoroughly with olive oil
Sprinkle salt, pepper, and optional herbs onto husks
Secure each ear with kitchen twine
Preheat grill to 350°F (15 minutes for charcoal or gas grill)
Place wrapped corn on grill grates using indirect heat
Cover and cook for 15 minutes, rotating every 5 minutes
Unwrap and grill directly for 5 minutes until charred
Serve hot with husks removed
Notes
Use indirect heat for the first 15 minutes to avoid burning
Wrap corn in aluminum foil if husks are too dry
Adjust grill temperature with a thermometer
Serve with lime wedges or vegan butter substitute if desired
