Ingredients
2 lbs Chicken Breast, cut into 1.5-inch cubes
1/4 cup Olive Oil
3 tbsp Lemon Juice, freshly squeezed
4 cloves Garlic, minced
1 tsp Dried Oregano
3 large Bell Peppers, cut into squares
2 medium Red Onion, cut into chunks
1 tsp Salt
1/2 tsp Black Pepper
Instructions
Whisk the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a medium bowl.
Combine the chicken with two-thirds of the marinade in a sealed bag and refrigerate for at least 1 hour.
Soak wooden skewers in water for 30 minutes if using.
Thread the marinated chicken alternating with bell peppers and red onion onto the skewers.
Preheat your grill to 400°F (medium-high heat).
Grill the kabobs for 12 to 15 minutes, turning them once halfway through.
Brush the reserved remaining fresh marinade over the hot skewers immediately after removing them from the grill.
Notes
If using wooden skewers, do not skip the soaking step to prevent charring. You can substitute olive oil with avocado oil if you prefer a smoke point better suited for high-heat grilling. For best results, use a variety of bell pepper colors to increase the visual appeal of your skewers.
