Description

These Mexican street corn chicken tacos offer a perfect blend of succulent, spice-rubbed poultry and the iconic creamy tang of elote. By utilizing a quick-char skillet method, we achieve a smoky, roasted corn profile that perfectly complements the savory chicken strips. Topped with zesty lime crema and crumbled cotija cheese, this vibrant and protein-packed taco recipe is designed to be a simple, elevated weeknight meal that brings festive street food flavors right into your home kitchen.

Ingredients

Scale

1.5 lbs chicken breast, sliced into thin strips
2 cups corn kernels, fresh or frozen and thawed
0.5 cup cotija cheese, crumbled (or substitute with feta)
0.5 cup Greek yogurt
1 tbsp chili powder
2 tbsp lime juice, freshly squeezed
1 tsp ground cumin
1 tsp sea salt
2 tbsp olive oil
8 small corn tortillas
Pinch of cayenne pepper

Instructions

Toss chicken strips in a large mixing bowl with chili powder, cumin, and sea salt.
Heat olive oil in a heavy-bottomed skillet over medium-high heat.
Sear the chicken in the skillet for approximately six minutes or until golden brown and cooked through.
Remove the cooked chicken from the skillet and set aside on a clean plate.
Add corn kernels to the same hot skillet and sauté until the corn develops deep brown charred edges.
In a small separate bowl, whisk together the Greek yogurt, lime juice, and a pinch of cayenne pepper.
Fold the charred corn into the lime crema mixture gently until well combined.
Warm the corn tortillas using your preferred method.
Assemble the tacos by placing two tablespoons of chicken onto each warm corn tortilla.
Top the chicken generously with the corn mixture and sprinkle with crumbled cotija cheese before serving.

Notes

Ensure the chicken is sliced into uniform strips to guarantee even cooking. You can garnish the finished tacos with fresh chopped cilantro or a wedge of lime for extra acidity. Store leftover chicken and corn mixture in separate airtight containers in the refrigerator for up to three days.
