Description
A refreshing, layered no-bake dessert combining dense chocolate crust, silky strawberry mousse, and airy whipped topping. Ready in 20 minutes with 2 hours chilling, perfect for summer or last-minute gatherings.
Ingredients
Strawberries, 12 oz (fresh or frozen)
Cream cheese, 8 oz (room temperature)
Sugar, 1/2 cup
Vanilla extract, 1 tsp
Heavy cream, 1 cup
Graham crackers, 1 1/2 cups, crushed
Unsalted butter (or oil blend), 4 tbsp (melted)
Instructions
Blend graham cracker crumbs and melted butter until fully combined
Press mixture into container using a flat-bottomed glass
Cover and refrigerate for 30 minutes while preparing layers
De-stem strawberries and combine with sugar and 2 tbsp lemon juice in blender
Puree until smooth, strain to remove seeds
Beat softened cream cheese with sugar until airy
Gently fold in strawberry purée and pour over crust
Chill 1 hour
Whip heavy cream to stiff peaks
Spread whipped cream over chilled mousse layer
Return to fridge for 1 hour before serving
Notes
Use frozen strawberries with 20-30 minutes thawing time
For vegan version: substitute cream cheese with vegan alternative and heavy cream with coconut cream
Gluten-free graham crackers available if needed
