Ingredients
4 bone-in, skin-on chicken thighs
1/2 cup unsalted butter
6 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried thyme
Salt and pepper, to taste
Instructions
Pat chicken dry with paper towels
Season both sides with salt, pepper, and thyme
Melt 2 tablespoons butter in a large oven-safe skillet over medium heat
Sear thighs, skin-side down, for 4-5 minutes until golden. Flip and repeat
Remove chicken from pan. Melt remaining butter in the same skillet
Sauté garlic for 30 seconds until fragrant
Deglaze the pan with lemon juice
Return chicken to pan. Pour the lemon-butter sauce over thighs
Bake at 400°F (200°C) for 20-25 minutes
Spoon the sauce frequently over chicken during baking
Check internal temperature: 165°F (74°C) in thickest part
