Description

Tender chicken thighs basted with roasted garlic and creamy butter, glazed with herbs and zesty lemon. A rich, savory comfort dish with crisp golden skin and juicy, aromatic meat.


Ingredients

4 boneless, skin-on chicken thighs (6-ounce each)
8 whole garlic cloves, roasted
3 tablespoons unsalted butter, melted
2 tablespoons fresh thyme sprigs (or rosemary)
2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
1 lemon, zest only


Instructions

Pat chicken thighs dry. Rub olive oil across both sides
Season evenly with sea salt, black pepper, and lemon zest
Halve 1 whole garlic bulb. Sauté in 1 tbsp butter until golden brown
Preheat oven to 400°F. Position rack in center
Place chicken on wire rack over oven-safe pan. Roast 10 minutes for crisp skin
Combine remaining butter with roasted garlic and herbs. Baste chicken
Return to oven and roast 15-20 minutes until fully cooked

Notes

For crisp skin, do not skip the searing step
Replace thyme with rosemary or sage as needed
Use unsalted butter to control sodium
Lemon zest is critical for balancing richness
Serve with mashed potatoes or arugula salad
