Ingredients
1 cup quinoa
1.5 cups cherry tomatoes, halved
2 medium cucumbers, diced
1 small red onion, sliced and soaked
4 cups cruciferous greens (spinach or arugula)
2 avocados, sliced
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1 clove garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
Instructions
Toast quinoa in olive oil in a skillet for 2 minutes
Add water/broth and simmer for 12 minutes until tender
Combine vegetables (tomatoes, cucumbers, soaked onion) in a bowl
Whisk dressing with lemon juice, garlic, parsley, dill, and olive oil
Assemble salad by mixing greens, cooked quinoa, and veggies with dressing
Add avocado slices just before serving
Notes
Substitute sun-dried tomatoes when out of season
Use vegetable broth for added flavor
Add avocado last to prevent browning
