Description
Experience the ultimate restaurant-grade texture with this light, velvety Mediterranean hummus. By emulsifying the tahini and lemon juice before adding the chickpeas, you create an airy, whipped base that eliminates graininess. Finished with a splash of ice-cold water, this protein-packed dip is perfect for healthy snacking, pairing beautifully with warm pita bread or fresh, crunchy crudités for an authentic Middle Eastern experience.
Ingredients
15 oz can chickpeas, drained and rinsed
1/3 cup high-quality hulled tahini
3 tbsp fresh lemon juice
1 clove garlic, peeled and germ removed
2 tbsp extra virgin olive oil
2 tbsp ice water
1/2 tsp sea salt
Instructions
Combine the tahini and fresh lemon juice in a food processor bowl.
Process for 60 seconds until the texture is whipped and pale.
Scrape down the sides of the bowl to ensure uniformity.
Add the garlic clove and salt to the tahini base.
Pulse for 30 seconds to pulverize the garlic.
Drizzle the olive oil slowly into the bowl while the processor runs.
Add the rinsed chickpeas to the processor.
Blitz the mixture for two minutes until smooth.
Add the ice water and pulse until the hummus reaches a light, fluffy consistency.
Notes
Ensure you remove the germ from the garlic to prevent a harsh, bitter aftertaste. The use of ice-cold water is the secret to achieving a professional, airy texture. Store in an airtight container in the refrigerator for up to 5 days.
