Ingredients
250 grams ripe strawberries
50 grams granulated sugar
2 unflavored gelatin sheets
250 ml heavy whipping cream
1 tsp vanilla extract
10 ml cold water
Instructions
Wash and hull strawberries, reserving some for garnish
Purée strawberries and sugar in a blender until smooth
Strain purée through a fine mesh sieve
Bloom gelatin sheets in 10 ml cold water for 5 minutes
Heat gelatin until melted, then stir into strawberry purée
Chill gelatin-strawberry mixture until thickened
Whip cream and vanilla extract until stiff peaks form
Gently fold whipped cream into strawberry base
Chill mousse for 1 hour before serving
Notes
Use ripe strawberries for optimal sweetness
Gelatin can be omitted for vegan option (will alter texture)
